Basil infused Tuna with caramelised Pumpkin & steamed Broccolini

This one’s great to whip up when the fridge/pantry is looking a little bare, (feel free to use whatever veggies you’ve got in your fridge to avoid a trip to the shops).


  • Medium sized fry pan (with lid)


  • 1 bunch of broccolini
  • 1 medium sized can of tuna (olive oil or fresh water ~ sustainably caught)
  • 1/8th of a pumpkin
  • Fresh basil
  • Salt & pepper
  • Dash of cold pressed olive oil or a bit of butter

1. Slice pumpkin

2. Drain Tuna

3. Tear basil into chunks


1. Place your fry pan onto a medium heat with a dash of oil or butter, add pumpkin slices & lid

2. Cook pumpkin slices each side between 7 – 9 mins & remove from pan

3. Add a dash  of water to the pan – pop the broccolini in, place the lid on & steam for 3 – 4 minutes (water should absorb)

4. Remove the pan from the heat, add your tuna & basil stir through to get a yummy infusion

Serve with salt & pepper to taste & a basil garnish 🙂
