Chilli Cashew Lime Sublime Stir Fry

Quick & nutritious stir fry ensuring you get your precious veggie dose!


  • Medium sized fry pan (with lid)


  • Protein (lean cut of beef, chicken or tofu/tempeh)
  • Mushrooms (enough for one serve/2 handfuls)
  • Bunch of bok choy
  • Small handful of cashew nuts (unsalted, raw)
  • 1 clove garlic (or paste 1 teaspoon)
  • 1 Onion
  • 1 red capsicum
  • 1/4 lime
  • Chilli flakes
  • Dash of cold pressed olive oil or a bit of butter
  • Salt & peper
  • Soy sauce

*Serves one


1. Peel and crush garlic

2. Peel and thinly slice onions (rings)

3. Wash & slice mushrooms, capsicum & bok choy

4. Slice your choice of protein marinade in a sprinkle of chilli flakes, salt & pepper, a dash (teaspoon or so) of soy sauce & a light squeeze of a lime (the long you can leave this the more flavoursome it will be)


1. Place your fry pan onto a medium heat with a dash of oil or butter, add garlic cook until golden, then add onions

2. Once the onions are transparent, add your protein. Once juices have evaporated, stir cashews through & cook until both protein & cashews are golden brown

3. Add your veggies, stir through & add the lid. Cook for 3-4 minutes. Remember, the rawer the veggies the more nutritious it will be for you 🙂

Pop your stir fry in a bowl, serve with a base of the bok choy, an extra sprinkle of chilli & a 1/4 lime (to flavour to your liking).
