Chilli Chicken Bok Choy

…will make your tummy sing with joy!

WHAT YOU NEED

  • Medium sized fry pan (with lid)

INGREDIENTS

  • A bunch of bok choy
  • A chicken breast
  • A carrot
  • An Onion
  • Garlic clove
  • Mushrooms
  • Salt, pepper & coriander
  • Soy sauce
  • Chilli flakes
  • Slice of lemon
  • Dash of cold pressed olive oil or a bit of butter

*Serves one

PREPARATION

1. Thinly slice chicken breast

2. Grate carrot

3. Slice mushrooms, onion & coriander

4. Peel & crush garlic

COOKING

1. Pop your fry pan onto a medium heat with a dash of oil, add garlic & onions cook to transparent

2. Add chicken breast with a splash of soy sauce & a sprinkle of chilli flakes – cook to golden brown

3. Stir through remaining veggies & pop the lid on for 2-3mins

4. Remove from heat, stir freshly chopped coriander through

Serve with a fresh squeeze of lemon & a coriander garnish 🙂
