Fully Fuelled Scrambley with a side of taost pecan mushrooms, fresh tomato & basil

This will keep you fully fuelled for your day!


  • Medium sized fry pan (with lid)


  • 3 eggs
  • Mushrooms (enough for one serve/2 handfuls)
  • tomato
  • Fresh pecan nuts
  • Fresh basil
  • 1 slice of multigrain bread
  • Dash of cold pressed olive oil or a bit of butter
  • Salt & peper

*Serves one


1. Roughly slice pecans

2. Mix your eggs – separating 1-2 yolks for lean option (recommended)

3. Slice mushrooms

4. Slice tomato

5. Toast bread


1. Place your fry pan onto a medium heat with a dash of oil or butter, add pecans, cook until golden brown – place to side

2. Add mushrooms – cook until lightly browned, stir pecans through & pop on your plate

3. Add your egg mixture to the pan, scramble until your desired texture & remove from heat

Pop the eggs on your toast, add your side of mushies & tamoto. Add salt & pepper to taste and of course your lovely fresh basil garnish.
