Lentil as Anything Nom’olette

Go on – make those taste buds go a little lentil 😉

WHAT YOU NEED

  • Medium sized fry pan
  • Small fry pan

INGREDIENTS

  • 2 handfuls of spinach
  • 2 handfuls of mushrooms
  • 1/2 a zucchini
  • 1/3 of a sweet potato
  • Dash of cold pressed olive oil or a bit of butter
  • 2 free range eggs
  • Sunflower kernels
  • Coriander

*Serves one

PREPARATION

1. Pop a cup of lentils to soak in a bowl overnight

2. Thinly slice mushrooms, zucchini & sweet potato

3. Beat 2 eggs in a bowl with a dash of skim milk or water

COOKING 

1. Place your medium fry pan onto a medium heat with a dash of oil or butter (if it’s not non-stick), add your sweet potato slices cook for 3-4 mins, before adding the remaining veggies, lentils & sunflower kernels to the mix. Add the lid & cook for 2 – 4 mins – tossing as required.

2. Place your small fry pan on onto a medium heat with a dash of oil or butter (if it’s not non-stick), add 2/3s of your veggies mix, pour your egg mix over the top & sprinkle remaining veggies on top, cook for 3 – 4 minutes.

3. Remove the small fry pan from the stove & pop it under the grill on medium/high heat for 2 – 3mins

Serve with a side salad of spinach &/or rocket, with a lemon wedge to zest that side salad up & a coriander garnish to finish :)
