Zesty-licious Salmon on Greens with a handful of crispy Beans

Quick & easy – perfect for any meal!

WHAT YOU NEED

  • Medium sized fry pan (with lid)
  • Sieve

INGREDIENTS

  • 1 bunch of asparagus
  • Sliced mildly smoked wild salmon (store/deli bought)
  • Half a can of organic mixed beans
  • Salt, pepper & your choice of mixed herbs (available from your local super market)
  • Slice of lemon
  • Dash of cold pressed olive oil or a bit of butter

*Serves one

PREPARATION

1. Open, place beans in sieve, rinse & drain

COOKING

1. Pop your fry pan onto a medium heat with a dash of oil or butter, add beans and herbs

2. Toss beans until golden/crisp, place on a side plate

3. Add a quarter cup of water to the pan – pop the asparagus in, place the lid on & steam for 4 -5 minutes

4. Drain asparagus, pop it on a plate, roll or drape smoked salmon slices & sprinkle a handful of beans

Serve with a fresh squeeze of lemon, an extra sprinkle of herbs – salt & pepper to taste
